Hillside Farms, a family-style dairy operation in Shavertown, has secured funding for a modern milk separator—replacing its aging 1960s-era centrifuge—to rejuvenate butterfat production and ensure long-term viability. The upgrade marks a critical investment in infrastructure for the small-scale processor.
According to Chet Mozloom, executive director at The Lands at Hillside Farms, the new stainless-steel separator will enhance butterfat recovery and milk processing quality, supporting local producers and preserving the farm’s artisanal dairy legacy.
The replacement comes after the vintage separator began failing, threatening to disrupt operations and diminish output. The modern unit not only restores production capacity but also meets contemporary hygienic and efficiency standards.
This initiative is part of a broader push by grassroots groups like the NEPA Food Dignity Movement, which channel grants and technical aid to sustain regional food systems—from farms to processing mills—protecting community livelihood and preserving food sovereignty.
With the separator now operational, Hillside Farms stands to expand butter and cream product lines, bolster partnerships with neighboring family farms, and reinforce its mission of sustainable, locally driven dairy production.
