Cheese production declined 5% YOY in 2023/24, according to Dairy Australia. The overall decline reflected a 2.4% YOY fall in cheddar, and a 7.4% YOY contraction in non-cheddar varieties.
Output of WMP (including infant formula) and dry whey was down 30.2% YOY and 10.3% YOY, respectively. SMP production rebounded to a 5-season high of 154,705t , and increase of 14.3% YOY while butter manufacture rose 5.1% YOY.
