INDIANAPOLIS — After a week of carving, Sarah Kaufmann, affectionately known as "the cheese lady" unveiled her gigantic cheese sculpture on Friday in the Ag-Hort building.

This is her 14th year of taking huge blocks of cheese and making them into a dairy masterpiece. And, as always, she gets her inspiration for her creation from the fair itself.
“We like to follow the theme of the fair: ‘Heroes of the Heartland.’ But of course, being dairy, we need to show our dairy farmer hero, and mighty milk, and then buttercup the cow who produces all the milk,” Kaufmann said. “So dairy farmers are our superheroes here at this booth.”
Students from the Herron School of Art also assisted in creating this sculpture.

This is on top of an investment of €18,060 for extra soiled water storage and additional calf housing over the past ten years, based on a typical 100 cow dairy farm.
