
New Clandeboye butter line underpins NZ dairy’s shift to higher-value fats and global market reach.
Fonterra has launched a $75 million expansion of its butter production facility at Clandeboye in South Canterbury, marking a significant investment in value-added dairy processing in New Zealand. The move is part of the co-op’s broader plan to allocate up to $1 billion over the next three to four years toward projects designed to increase returns from milk by adding value and enhancing operational efficiency.
The expanded butter line at Clandeboye will significantly boost capacity and product diversity, allowing the site to produce a wider array of butter formats, including those that meet halal and kosher standards, to satisfy growing international demand. Construction has moved from design into demolition and early groundwork, with piping and facility upgrades next, and the exterior of the new building expected to become visible by April.
Clandeboye currently serves as Fonterra’s sole butter production site in the South Island — and this expansion positions it to better support global supply chains and professional kitchens worldwide. The increased capacity aligns with global trends showing stronger demand for dairy fats, particularly butter, in foodservice and export markets.
The project is expected to have a positive local economic impact, with site manager Ross Burdett noting the creation of 16 new jobs and strengthened manufacturing infrastructure in the South Island. Deliveries from the new line are anticipated to begin in about 15 months, reflecting a medium-term investment in premium dairy processing capability.
This expansion fits into Fonterra’s strategic emphasis on value-added dairy products — such as premium butter and specialized milk fats — to diversify beyond basic commodities and capture higher margins. In doing so, the co-op is responding to competitive pressures and seeking to bolster returns for farmers in a challenging global market.
