DARI Processing’s new facility will transform local milk into ultra-filtered, high-protein, lactose-free dairy products.

A major development for Nebraska’s dairy sector is underway as DARI Processing officially broke ground on a new dairy plant in Seward on June 18. The facility represents a bold move toward adding value to local milk production while strengthening the state’s agricultural economy.

DARI Processing LLC, founded by fourth-generation dairy farmers from Nebraska, aims to produce MOO’V Real Milk — an ultra-filtered, lactose-free milk with high protein and low sugar content. This premium product reflects growing consumer demand for functional and health-oriented dairy options.

Once operational, the Seward plant is expected to process around 1.8 million pounds of milk daily, qualifying it as a medium-scale facility. According to a University of Nebraska–Lincoln study, a plant of this size could generate an estimated $140 million in annual economic impact for the region — a significant boost to rural economies and the broader supply chain.

The groundbreaking event brought together leaders from the Nebraska State Dairy Association, local government, industry stakeholders, and dairy farm families, underscoring the widespread support for this farmer-led initiative. Their collective enthusiasm highlights the importance of processing capacity and value-added dairy within the state.

Kris Bousquet, executive director of the Nebraska State Dairy Association, praised the project for its innovation and local leadership. He emphasized that DARI’s investment strengthens Nebraska’s position as a premier destination for dairy growth and reinforces the strategic shift toward processing infrastructure in the Midwest.
